This is a dish that I didn’t grow up eating but I wish I did. It’s the kind of dish that harks back to probably the 50’s and 60’s, when casseroles were a big thing. This kind of cooking isn’t fancy or sophisticated… but it’s homey and comforting and sometimes we all need that.
Someone commented that it looked like the Jackie Kennedy Casserole and I looked it up and it’s very similar. I came across this dish in another one of my thrifted cookbooks and the name Country Baked Noodles called for me. I made some adjustments, one of which was swapping out the cottage cheese for ricotta cheese and a few others like adding the chives. This is a rich dish, so a little goes a long way. But I loved it. It felt like nostalgia on a plate.
It’s funny how as the world hurls itself forward, we often find ourselves getting pulled in by things that draw us back. Whether it is an old song, fashion and of course food. Our kids want to know what it was like to grow up before the internet and even actual phones are making a comeback. All of this longing for nostalgic things is likely a direct correlation to us not knowing what is real or not real anymore. It’s hard to trust the content we see. While I didn’t grow up eating casseroles of any kind, lately, I have been drawn to this kind of food. Soft, creamy and comforting.
