A Reader-Favorite Dinner Turned Into the Perfect Meal Drop-Off

I feel like my Sheet Pan Sausage and Veggies dinner has been waiting its whole life to become a meal drop-off. 😂

It’s been one of the most-loved recipes on my site for years, and the second I started packing this meal, I couldn’t believe I hadn’t done it sooner! The sausage and veggies reheat like a dream, couscous makes it even more filling, and a little Parmesan finishes everything off beautifully.

Then I added a few sides, some fruit, snack for days, and a couple tasty little treats that are simply divine.

Basically, they can sit down to a really good dinner, snack their way through the next day, and end up with two desserts in the fridge. I call that a successful meal drop! :)

For the main, we’ve got my popular sheet pan sausage and potatoes. I mean, if only all veggie-packed dinners looked like this!

You’ve got smoky sausage, crisp-edged potatoes, roasted asparagus, tender carrots, and golden onions, all covered in my favorite seasoning blend. It’s one of the most popular recipes I’ve ever shared, and it reheats so well without losing everything we love about it.

I packed couscous alongside it, then topped it off with some Parmesan, parsley and dijonnaise in their own little containers.

When it’s time to eat, warm up the sausage, veggies, and couscous, pile everything together, add a good shower of Parmesan, and drizzle the dijonnaise over the top.

Speaking of the dijonnaise, here’s how I like to make mine!

While not a necessity, a bag of soft rolls is such an easy and appreciated addition to this dinner. They’re great alongside the sausage and veggies, and kids can even turn them into little sausage sandwiches if that sounds better to them.

Plus, any extras can be used for breakfast or lunch the next day. And if you’re really feeling ambitious, nothing beats these homemade rolls!

For a fresh side, I made my blueberry salad.

This salad is SO good! It has sweet blueberries, corn, cucumber, avocado, pistachios, feta, and a lemon-basil vinaigrette I want to pour on everything.

It adds a fresh, summery side to the roasted sausage and veggies, and the sweet blueberries are so good with all the savory flavors in the main dish.

I usually bring cut fruit, but sometimes whole fruit is even more useful. It lasts longer, requires no refrigeration, and can be grabbed whenever someone needs a quick snack.

Bananas and clementines are also easy for kids to eat without too much help, which feels especially helpful in a house with a new baby.

These add a salty, crunchy snack that can be enjoyed between meals. You can switch it up with any of your favorite chips, but my family is obsessed with these ones! So far they’ve also been a big hit with everyone we’ve shared them with.

I have learned that adding a good bagged snack to a meal drop-off is almost always worth it. It WILL get eaten!

And because we can’t forget dessert, it’s time to talk about this oreo fluff. It’s creamy, light, loaded with Oreos, and very hard to stay out of. They can enjoy it as a fun treat after dinner, or eaten by the spoonful straight from the fridge after the kids are finally asleep haha.

It’s also a great drop-off treat because it’s served cold and doesn’t require any baking, slicing, or reheating. Just pull it out of the fridge and grab a spoon!

And because one extra treat is never a bad idea, I added caramel corn.

Caramel corn keeps well and can sit on the counter for everyone to snack on whenever they want. It also makes the delivery feel a little more like a care package than a single dinner.

I’d package it in a resealable bag or container so it stays crisp for a few days (although it rarely lasts that long around here…).

That’s everything packed up and ready to deliver! The sausage and veggies handle dinner, while the rolls, salad, fruit, chips, Oreo fluff, and caramel corn give everyone plenty to enjoy later too.

I love that this meal feels generous while still being easy to put together. You can make the entire spread, or start with the main dish and add whatever you have time for. It all counts, and it will all be appreciated!
