Quinoa, millet, and buckwheat are actually called pseudo cereals because even though we cook with them like grains, they’re not technically grains at all. A pseudocereal is a non-grass plant that produces seeds. While rice and corn grow on grasses, pseudocereals come from leafy plants. And one of my favorite things about quinoa and other pseudocereals is that you can puff them like popcorn (with nothing but a dry pan)!
