Easy Loaded Street Corn Sweet Potatoes

Alright guys, today we’re going to be doing an easy recipe. Don’t get me wrong, I love all the ridiculous over the top creations that Celina and I come up with, but sometimes you just need something fast and delicious. Bonus if it’s healthy too, which I would classify this one as.

It’s definitely not the lowest calorie thing in the world, BUT it’s built on stuff that’s actually good for you. Sweet potato is loaded with fiber and vitamin A. Beef gives you a big hit of protein and iron. Corn brings even more fiber and natural sweetness. And you can easily make more swaps than I already did, like using less butter or oil if you want to lighten it up further.

This baby only takes about 20-30 minutes of actual work — most of the time is just waiting on the potatoes in the oven, so plan accordingly. It’s become a staple in our house and you can make it a ton of different ways, so once you’ve got the basic idea down it’s yours to mess with.

Let’s make it!!

  • Sweet Potatoes

  • 4 large sweet potatoes

  • Olive oil

  • Kosher salt

  • 4 tbsp butter

  • Cinnamon

  • 2 lbs ground beef (85/15 or 90/10)

  • 1 small onion, diced

  • 3 tbsp tomato paste

  • 2 tsp kosher salt

  • 1 tsp black pepper

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 1 tsp oregano

  • 1 tsp cumin

  • 1/4 tsp cinnamon

  • 2 tsp paprika

  • 2–3 tbsp water, if needed

  • 2 cups corn (fresh, frozen, or grilled)

  • 1 tbsp butter, for charring

  • 1/4 cup Greek yogurt, or sour cream

  • 1/4 cup light mayo, or regular

  • Juice of 1/2 lime

  • 1/4–1/2 cup cotija cheese

  • 2 tbsp chopped cilantro

  • Salt and pepper, to taste

  • Tajín, to taste

  • 1.5 cups shredded Mexican cheese

  • Extra cotija

  • Cilantro

  • Hot sauce or Tajín (optional)
