Crispy Chicken Caesar Salad — one of my wife’s favorites, and proclaimed by many to be the ultimate girl dinner. So naturally her brain went straight to: what if we took all of that, slapped it between two pieces of perfectly toasted garlic bread, and called it a sandwich? Well. We’re about to find out, aren’t we?? And fellas, don’t worry, this one’s for you too. But fair warning: if you suddenly feel like lighting a candle, starting a 12-step skincare routine, and maybe sneaking in a little online shopping after… don’t fight it. It’s part of the process. This sandwich does things to people. My wife has eaten this three times in the last month. I’m not complaining. I’m just saying, if you make this for someone, they will like you more. That’s just science. Guys, this isn’t complicated. We’ve got a crispy breaded chicken cutlet, an easy homemade Caesar dressing that comes together in literally 5 minutes, some romaine, and garlic bread that I promise you will not be able to stop eating on its own. It’s a lot of components on paper, but each one is simple and the whole thing flows pretty naturally once you get going. A couple things worth noting before you dive in. Pound your chicken cutlets thin and even. This is the difference between a crispy golden cutlet and an overcooked dry disaster. Get your oil to 350°F before the chicken goes in, and don’t overcrowd the pan or the temp drops and things get sad. And please, for the love of everything, don’t overbake the garlic bread. I hate destroying the roof of my mouth on rock-hard bread and I refuse to let that happen to you!! Okay. Let’s build this thing.
2 chicken breasts, sliced in half and thinly pounded
1 tsp salt
1/2 tsp pepper
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp oregano
3 eggs
Splash of milk
1 cup flour, seasoned with 1 tsp salt + 1 tsp pepper
2 cups Italian-seasoned breadcrumbs
1/4 cup Parmesan
2 tbsp parsley (optional)
1 cup mayo
4 tbsp olive oil
1.5 tbsp Dijon mustard
1 tbsp Worcestershire
Juice of 1 lemon
3 cloves garlic, minced or grated
1/2 cup grated Parmesan
Salt and pepper to taste
1 head romaine lettuce, chopped
4 hoagie/sandwich rolls
8 tbsp butter, softened
8 cloves garlic, minced or grated
2 tbsp parsley
1/4 tsp red pepper flakes
Salt and pepper to taste
Grated Parmesan, for topping
