When my wife and I went to Disney last year, one of our favorite things we ate was the viral “Cheeseburger Spring Rolls.” The only issue is that they’re a little small. So when my wife told me she was craving them again, my first thought was, what if we make these a little bigger and a little better?
That’s where the idea for cheeseburger eggrolls came from. And these are actually super EASY to make. You can definitely do them in the air fryer too if you don’t want to deal with frying (see note below directions) although I can’t promise it’ll taste quite as good.
Also, I may need to plan a trip back to Disney soon. My wife and daughter have both been harassing me about Disney Halloween, and I’ll admit, it is pretty sick. I’d totally go again if it weren’t for the whole dropping thousands of dollars aspect of it.
Anyway. Let’s make some eggrolls.
1 onion, finely diced
2 lbs 80/20 ground beef
2 tsp salt
1 tsp pepper
2 tsp garlic powder
1 tsp onion powder
2 tsp paprika
1/2 cup chopped pickles
1 tsp Worcestershire (optional)
8 slices American cheese
1/2 cup mayo
1/4 cup ketchup
1/4 cup mustard
1/4 cup relish
Splash of white vinegar
Oil, for frying (I use vegetable)
Eggroll wrappers
More American or mozzarella cheese (optional)
