“Meal recycling” is my new favorite thing, and it’s about to be yours, too. Last month, I introduced a new idea… “Cook Once, Eat All Week,” where I share how cooking one big batch of protein can turn into 3 completely different meals that’ll keep you satisfied throughout the week. After putting ground beef to work in last month’s recipes, this month we’re switching things up with ground chicken.
Instead of cooking dinner from scratch every night, you’ll start with a protein base that’s already prepped and ready to go, then build fresh meals around it throughout the week. I mean, let’s be honest… by day three of eating the same meal prep, even your favorite recipe starts feeling like a punishment. The goal here is to save time without getting stuck in a sad cycle of leftovers you’re forcing yourself to finish.
This week’s lineup includes...
Thai Peanut Chicken Lettuce Wraps
Chicken Tortilla Soup
30 Minute Chicken Fried Rice
You’re going to love it!
