In case you haven’t caught on, I’m still trying to squeeze out the best eats for our summer days! I would tell you this is because summer is my favorite season of food, but that would be a lie…because so is fall, winter, and spring!
Every season gives us so much bounty and I always want to enjoy all it has to give us. So for this last week of July, I have a week of dishes that still keep us firmly grounded in these sunny evenings!
Dishes like my Cherry Bourbon Glazed Grilled Pork Loin and a Fresh Corn Panzanella! And yes, I did pair this with a chilled glass of Pinot Noir!
When I first started dreaming up this recipe, I had never grilled a whole pork loin before, and I was nervous it would dry out. When I tell you this is the most juicy, most tender pork I have ever had - I mean it! My recipe takes you step by step on exactly how to get it to taste so delicious.
Fun note, we continued to eat off the Panzanella (also a new recipe) for several days after and it just kept getting better!
Furthermore, am I a little annoyed I have not been grilling more salmon this summer?
Yes!
It takes less than 10 minutes on the grill, and I love it even more than pan frying or air-frying! The skin gets so crispy and the salmon stays tender and perfectly flaky.
Of course I brush it with a garlicky lemon butter sauce and serve it with a creamy dill sauce! This meal comes together so fast!
