I had NO idea what I was going to make for you today 😬. So I grabbed some tofu and one of those little lunchbox-sized cups of pineapple chunks and this is what I came up with.
Talk about making it up as you go! 😂. And you know what? Sometimes those are the BEST recipes.
No planning. No special trip to the grocery store. Just opening up the fridge and pantry, looking at what you have, and thinking...
“Okay... what can I make with THIS?”
The result was this Smoky Pineapple Tofu Sandwich.
It’s sweet, savory, a little smoky, and makes a yummy sandwich.
And it’s pretty simple to make. You’ll need:
a blender
a frying pan, air fryer, or oven
a block of extra-firm tofu
one of those little 4 oz cups of pineapple
and a few everyday ingredients you probably already have
The pineapple — juice and all — goes into the blender with some low-sodium soy sauce, rice vinegar, smoked paprika, garlic and onion powder, a little liquid smoke, and...
pickled beets. 😂
I know. I know. But hear me out.
I had some in the fridge, so why not? They add a little tang and sweetness, but mostly I wanted that COLOR. Recipe Note: If you don’t have any, just leave them out. They’re mostly for color anyway.
Blend everything into a sauce, marinate your tofu for about 30 minutes, and then cook it however you like.
I pan-fried mine, but I see no reason you couldn’t use your air fryer or oven instead.
Then I toasted up some sourdough, added a little vegan mayo, fresh tomato, onion, lettuce, a slab of that smoky pineapple tofu, and a sprinkle of nutritional yeast.
Done.
Nothing fancy or complicated - just a really good sandwich made from stuff I already had.
And maybe that’s a good reminder that cooking doesn’t always have to start with a recipe. Sometimes you just have to open the pantry, grab a few things, and see what happens.
