Ingredients
200g fresh or frozen mulberries, strained (reserve the juice)
300ml mulberry juice
1 heaping tsp Dijon mustard
2 tbsp honey
Juice of 2 lemons (adjust depending on the acidity of your mulberries)
Salt and pepper, to taste
100ml olive oil
4–5 ice cubes
Method
In a blender, combine the mulberries, reserved juice, mulberry juice, mustard, honey, and lemon juice.
Season with salt and pepper, then drizzle in the olive oil slowly while blending, until emulsified.
Add the ice cubes and blitz again - this chills the dressing quickly and gives it a light, frothy texture.
Taste and adjust: more honey if your berries are tart, more lemon if you want extra sharpness.
