the bare minimum 013: mango jalapeño baked wings

No matter how you sauce them, this is a perfect base method to baking wings. Sauce it however you want; doesn’t affect my life.

  • 5 pounds chicken wings, tips removed

  • 1 teaspoon baking powder

  • 1 teaspoon cornstarch

  • 1 teaspoon salt

  1. Preheat oven to 450°F, and place the oven rack on the middle level. I like to use convection, but not required.

  2. While oven is heating, toss wings with baking powder, cornstarch, and salt. Place on a raised tray, as seen in the vid, so the airflow surrounds the wings.

  3. Bake for 50 minutes, flipping halfway.

  • 1-2 ripe mangos, peeled and diced

  • 2–3 jalapeños, roughly chopped

  • 2 cloves garlic

  • 2 tbsp butter

  • 2 tbsp honey

  • Juice of 1 lime

  • 2 tbsp rice vinegar

  • ½ tsp kosher salt

  • 1 tbsp hot sauce

  • 1 tbsp soy sauce

  • Water (as needed)

  • Cilantro, for garnish

  1. While the wings cook, melt the butter in a saucepan over medium heat.

  2. Add the jalapeños and garlic. Cook 2-3 minutes until softened.

  3. Add the mango, honey, lime juice, rice vinegar, and salt.

  4. Simmer about 5 minutes until the mango is soft.

  5. Blend until smooth. Make sure to taste it to make sure you like it. Make adjustments if you don’t.

  6. Add water a tablespoon at a time to thin until it coats the back of a spoon but still clings to wings. Toss the wings in it, and garnish with more jalapeño and maybe even some cilantro.

I’m gonna talk about my life now

I’m not one to normally venture out into the city on a Sunday morning, but I made an exception this week with Lindsey for bagel sandwiches. Glad I did. Finding a true NY bagel in Austin is pretty close to impossible, but I really enjoyed it. This spot is legit; get the green sauce.

While this isn’t going to become a bike/fitness account, I’m very stoked on this. I recently upgraded to fully carbon Canyon Grail and I’m loving it. I didn’t trust myself to assemble it so I had it shipped to The Meteor here in Austin and their mechanics put it together. Few things are better than a good bike ride.
