One Pot Lemon Chicken Orzo

One pot dinners are a parent’s solution to the modern teenager’s sports schedule. Why do they have practice until 10pm? Why are their games 2 hours away? Why do they practice five days a week?
What ever happened to being a kid? The days of riding bikes around the neighborhood when phones didn’t exist and your mom couldn’t text you or track you on Life360. Chugging sodas at friends houses because your dad refused to buy the good stuff.
Anyway, parents don’t have time anymore. We’re tired. Sometimes we cook one pot dinners.

2 pounds boneless, skinless chicken thighs, diced
1 teaspoon garlic powder
1 teaspoon thyme
1 teaspoon salt
Some cracks of black pepper
1 tablespoon olive oil
