My husband complains that I don’t coordinate my meals with seasons because I have no problem eating a bowl of chili on the hottest day of the year. This week is no different! This week I spent $63 at Aldi to make five dinners that feel warm and comforting, but maybe a little too earlier in the year. My brain is already thinking about cooler evenings and fall décor (along with fall desserts I’ll be sure to share).
If you don’t have an Aldi nearby, I converted the grocery list into the Walmart version too. Hopefully, you can follow along without missing a beat!
Here’s what we’re cooking this week:
• Red beans and rice — the kind of meal that makes your house smell like you are on vacation in Louisiana.
• Street tacos — even cozy weeks need a little fun on taco Tuesday!
• Tuna casserole — nostalgic, simple, and honestly underrated.
• Chicken soup over rice — the official meal of “it’s the first week of school and my kids are already getting sick.”
• Mississippi meatballs with mashed potatoes — comfort food royalty.
I feel like I can’t say it enough but I’m just really thankful you’re here cooking with me.
