Welcome to week 11 of budget meal plans! I’m so glad you’re here. Truly, without all of you watching my videos and subscribing to my Substack, I wouldn’t get to do what I love which is creating content that helps families stretch their grocery budget in this wild economy. Groceries feel like luxury items these days, so if I can help even a little, it means the world.

I’ve loved cooking for as long as I can remember. I was that kid who hovered over my parents or Grandma like a tiny sous‑chef, always wanting to stir or taste something. And don’t even get me started on cooking shows…Julia Child was my queen. The fact that I now have my own little “cooking show” on social media still blows my mind. So thank you, thank you, thank you.

Now for a little childhood cooking story…

My sisters and I used to bake like it was our full‑time summer job. The only problem? We never had the ingredients the cookbook called for. Back then, you could knock on a neighbor’s door and ask for a cup of sugar without anyone thinking twice. So one day, we took it to the extreme…

We wanted cookies. We had nothing.

So we went house to house collecting ingredients like we were on a scavenger hunt.

“Hi! Could we borrow two cups of chocolate chips?”

Next house: “Hello! You wouldn’t happen to have a cup of Crisco, would you?”

Next house: “Do you have… literally anything that goes in a cookie?”

And somehow, someway…we gathered every ingredient and baked the best cookies ever. Times have definitely changed, and there is no universe where I’m letting my kids roam the neighborhood asking for shortening. But it’s one of my favorite memories.

Anyway, back to this week’s meals!

What are we cooking this week?

Southwest Taco Salad: Very tasty and actually very filling! My husband loved this recipe.

Protein Pizza: This is definitely in my rotation for my kids. They love pizza and don’t realize they’re getting a healthy dose of protein in the process.

Beef Noodle Skillet: Hearty and easy. It’s also great for leftovers.

Chicken Quesadillas: A flexible meal that can be spiced however you like!

"Big Mac” Tacos: A fun meal with a different twist on tacos. This was VERY popular at my house.
