One Pot French Onion Pasta

French onion soup has always been one of my ultimate comfort foods, so naturally I had to turn it into pasta form. This recipe has everything I love about the classic— caramelized onions, cozy thyme, rich broth, and lots of parmesan— but made as an easy one-pot pasta that feels extra comforting on a weeknight.

As the pasta cooks directly in the broth, the starches release into the pot and when mixed with the caramelized onions, create the glossiest sauce It’s rich, savory, cozy, and truly one of my all time favorite recipes.

Ingredients

4 tbsp butter

1 large onion, thinly sliced

1/3 cup dry white wine

1 tbsp fresh thyme leaves

10 oz pasta

3 cups beef broth

1 tsp Worcestershire sauce

1/4 cup parmesan cheese

1/4 cup milk or cream

Salt + pepper

Instructions

  1. Melt butter in a large pot over medium heat. Add onion and cook until deeply caramelized, about 25–30 minutes.

  2. Stir in thyme and white wine. Simmer 2–3 minutes.

  3. Add beef broth, Worcestershire sauce, and pasta. Bring to a boil, then reduce heat and simmer until pasta is cooked and liquid has reduced, about 10–12 minutes.

  4. Stir in parmesan and milk or cream until creamy. Season with salt and pepper to taste.

  5. Serve warm with extra parmesan and black pepper on top.
