I am writing to you from the Seattle airport as I wait to board my flight to Bilbao. My kids and I are headed to the Basque Country to spend a couple of weeks with family, and some childhood friends from the U.S. will be joining us as well. It’s shaping up to be a busy, joy-filled summer reunion.
A heat wave is waiting for us when we land, so all I can think about right now is heading straight to the beach after we arrive. I hope to share a few updates from our travels while I’m away, and maybe even make a recipe with my mom, just like I did on my last visit home.
Before I leave, though, I am so excited to share this recipe.
Summer is made for sticky fingers, crackling campfires, and backyard BBQs. If you’ve been searching for a gluten-free graham cracker that actually tastes like the real thing, this recipe might just become your new staple. These crackers have that familiar wholemeal flavor, gently sweetened with honey, and finished with just a touch of cinnamon. They deliver everything you love about traditional graham crackers, without the gluten.
They’re crisp, golden, and absolutely perfect for summer s’mores, cheesecake crusts, or simply enjoying with a cup of tea on a warm evening. I also used them to make a dreamy no-bake creamy dessert for a BBQ this past weekend, and it disappeared in minutes. I’ll be sharing that recipe in the next few days, but first, let’s make the graham crackers.
