Since switching to home milling my flour I have been fighting for my life to get a great oven spring. After playing with various milling, sifting, scalding and bran reincorporation techniques I’m nearly at 100% whole and finally proud enough of a loaf to share it here.

Y’all be anti-AI and data centers and then get on an airplane that creates more per passenger carbon emissions than 15 years of heavily using a chatbot (training included). Go live as an off grid monk or help chart a positive path forward where we collectively extract the most possible out of the piece of shit companies building stuff most people won’t admit they actually want and need.
