I found myself staring recently at yet another flood of Instagram posts celebrating a summertime Amalfi Coast-style pop-up operating inside a Minneapolis hotel restaurant.
The videos were nice. The lighting was perfect. Everyone seemed to be having fun. The cocktails glowed in the late afternoon sun. The tables looked as if they wanted you to believe they came directly from Positano. Captions overflowed with enthusiasm and declarations that this was the experience of the summer.
What was missing was almost everything else.
