There’s a version of this dish that costs a fortune at a restaurant. Crispy chicken, buttery potatoes, sharp greens, and a buttery lemon pan sauce, served in a rustic bowl for well over $30. This is not that version.
This is the one you make on a random Tuesday with four chicken thighs and a bag of potatoes you grabbed without thinking. It’s built on one idea: render, reuse, and layer flavor instead of adding more ingredients.
The chicken fat becomes the potato fat. The browned bits become the sauce. The acid cuts everything at the end so it doesn’t feel heavy, and the peppery arugula and radish salad screams garden fresh. No seed oils (or excess fats) No nonsense. Just heat, timing, and knowing when to stop messing with it.
If you can run an oven and a pan at the same time, you can make this.
Serves 2–3
For the chicken and potatoes
4 bone-in, skin-on chicken thighs
1.5 lb baby Dutch yellow potatoes (like Melissa’s Produce or similar), halved
Extra virgin olive oil
1 tbsp fresh thyme, plus more for finishing
Salt
For the pan sauce and finish
1–2 tbsp olive oil or avocado oil
1 large Belgian shallot (or 2 regular shallots), sliced
1 lemon, halved
3 tbsp cold butter
Splash of water
Salt and freshly cracked pepper
For the salad
2–3 cups wild arugula
5 radishes, thinly sliced
2 tbsp apple cider vinegar
Extra virgin olive oil
1 tsp nutritional yeast
Salt and pepper
1. Start with the sheet pan
Heat oven to 350°F.
On a sheet pan, toss the halved potatoes and chicken thighs with a generous amount of olive oil, thyme, and salt. Lay the chicken skin-side down directly on the pan, with the potatoes scattered around it.
Roast for about 15 minutes, or until:
the chicken skin is starting to crisp where it contacts the pan
the potatoes are picking up golden color
2. Pull, separate, and build flavor
Remove the pan from the oven.
Take the chicken off and set it aside on a plate. Toss the potatoes in the rendered chicken fat and scrape up the browned bits. Return the potatoes to the oven to continue roasting.
3. Stovetop finish (this is where it gets good)
Heat a carbon steel or heavy pan over medium-high heat. Add olive oil or avocado oil.
Place the chicken thighs skin-side down. Add the sliced shallots around the chicken so they soften and caramelize in the fat.
Cook 2–3 minutes to deepen the crust. Flip the chicken.
Add:
juice of 1 lemon
the lemon halves directly into the pan
butter
a small splash of water
salt, pepper, fresh thyme
Swirl the butter into the sauce as it melts. Once it emulsifies, kill the heat.
4. Quick salad
Soak the sliced radishes in cold water for a minute, then drain.
Toss with arugula, cider vinegar, olive oil, nutritional yeast, salt, and pepper. Keep it light and sharp.
5. Bring it together
Pull the potatoes from the oven and scrape everything—crispy bits included—into a serving dish.
Top with the chicken. Spoon the lemon-thyme butter sauce and caramelized shallots over everything.
Serve with the salad on the side.
