So I know that it is the start of summer, but something in me is craving cozy.. cozy like: crockpot soups, planting pumpkins (that I’m told will be ready in 180 days), my ninth rewatch of Gilmore girls kind of vibes. Anyone else? It could be because in Tsexas, summer is our winter - it just gets too hot to do anything outside and we all collectively count the days until pumpkin spice season is upon us. So yes, I made the BEST most delicious crockpot curry this week and I want to share with you!
5-5-5 Japanese Crockpot Curry
Ingredients:
5 small potatoes (Yukon gold)
5 carrots
1 onion
1 lb chicken
5 cups water
2 packages of S&B curry medium
(Optional: broccoli and frozen peas)
Directions:
Peel and cube potatoes and carrots
Place curry blocks on the bottom
Place chicken on top
Then carrots and potatoes and onions
Cook on high for 5-6 hours
Put broccoli and peas during the last hour
Serve over rice
This is my go-to meal train drop off. It is so easy and so delicious and hearty. You will need to hunt for some of these curry cubes though at your store and if not, Target has them. But try this and let me know, it’s such a cozy 90s mom meal and the best part is you can get at least 5-7 meals out of one sitting. Love to see it.
Which brings me to, when it comes to recipes - write them down! Writing down recipes is sooo nineties mom and it doesn’t really take that long. This is a shorter one today because I am actually on a solo trip by myself without my daughter and I have more thoughts on that / I’m processing!! Bear with me, LOL and also give me all the tips if you’ve done this before - it’s so hard but so good.
