My days here are slow and built around simple things, local markets, really good food, meals at their own rhythm (lunch at 12-13 is non-negotiable), and that calm, steady way of living that feels so different.

I spend a lot of time cooking, working on my second e-book, filming recipes, and just enjoying this quiet life: soaking up the sun and spending long hours in the garden. And somewhere in between all of that, I had the idea to start a small series here, Italian Cooking Diaries, where I’ll share what I’m learning, cooking, and seeing along the way.

And this peperoni ripieni (stuffed peppers) is the first recipe I’m sharing with you.

There’s a reason people always say that the simplest ingredients make the best food, and this dish is exactly that. I’ve had stuffed peppers so many times before, and I love the way we make them in Ukraine, whole sweet peppers filled with meat, carrots, onions, (sometimes rice), slowly cooked in a big pot with tomato sauce. It’s comforting, nostalgic, and very much a classic.

This version is completely different. No long cooking, no extra steps, just sweet peppers, good-quality sausages, and a simple topping of breadcrumbs and parmesan.

I first tried these a couple of years ago when I was visiting my aunt in Italy. Her Italian mother-in-law made them, and I remember being genuinely surprised at how something so simple could taste that good.

For this recipe, the peppers really matter. Go for long, sweet ones — their flat, wide shape holds the filling well and gives you the right balance in every bite. They’re cut lengthwise, filled with meat, finished with breadcrumbs and parmesan, and baked until tender with a golden, crisp top.

It’s the kind of food you want to eat for lunch or dinner, comforting, easy, and soo delicious.

So let’s get into it. I really hope you’ll enjoy it just as much.

Peperoni ripieni (Italian stuffed peppers)

Ingredients

8 long sweet peppers (Kapya / Romano style)

800 g–1 kg pork sausages or minced meat

100 g breadcrumbs

100 g Parmesan, finely grated

olive oil

salt & black pepper (if using plain minced meat)

Method

  1. Preheat the oven to 200°C.

  2. Prepare the peppers. Wash them, cut in half lengthwise and remove the seeds and membranes.

  3. If using sausages, remove the casing and use the meat inside. If using minced meat, go for something with a bit of fat, it will stay much juicier (pork or a mix works best).

  4. Arrange the pepper halves on a baking tray lined with parchment. Fill each one with the meat, not too tightly packed, just enough to nicely fill the pepper without overloading it, so it cooks evenly.

  1. Mix the breadcrumbs with the grated Parmesan. Sprinkle generously over each pepper, don’t be shy here, this topping is what makes the whole dish. Drizzle with olive oil.

  1. Lower the oven to 180°C and bake for 25–30 minutes, until the peppers are soft, the meat is cooked through, and the top is golden and crisp.

NOTES

  • Sausage meat gives a much juicier result, but good-quality minced meat works perfectly too.

  • You can use pork, or a mix with chicken, turkey or beef, just keep in mind leaner meat will be less juicy.

  • The topping is key, don’t skip it and don’t go light on it.
