Quesadillas are a crowd pleaser whether they are for a kids lunch or a post-workout boost, they are easy to make, simple to store, and fun to eat. So what do you put into a quesadilla? We like beans, meat or tofu, and cheese.
In this video, we chose a Vegetarian option and used the Black Bean Tofu Hash recipe from Always Hungry? (page 222). This recipe is a crowd favorite - it has even been a “tofu-skeptic converter”…

Grab-and-go: These quesadillas are perfect to take with you on-the-go (and your family will love them too!)
Lower Carbohydrate: If you’re looking for a lower carbohydrate option, you could swap the tortilla with a low-carb tortilla OR use our chickpea-based crepe recipe as a tortilla substitution
Post-workout: Replenishing your body with carbohydrates and proteins is important to support recovery after a higher intensity workout. This recipe strikes that balance perfectly!
Meat-based: If you prefer using meat, you can replace the tofu with one of our Shredded Chicken Recipes Always Hungry? (page 241-42) or Always Delicious (page 110), you could also use any kind of cooked ground meat. Follow the rest of the recipe as-is.
Freezer-friendly: Generally, we don’t recommend freezing tofu. However, if you prepare this meal with ground meat, you could absolutely freeze it in individual servings. This way, you can quickly reheat the prepared ground meat & black bean mix, add it to the tortilla - and… bon appetit!
Boosting Flavour: Be sure to cook your spices in the oil for a few minutes before adding the remaining ingredients. This process enhances the flavours of the spices. And remember, tofu really soaks up the flavours, so you’ll usually need to double the spices when substituting tofu for meat recipes.
