Tacos on a Monday

Monday night tacos go hard. Since the toppings can be made the weekend before it’s not too time consuming to put together, and once they’re made, you’ll have plenty of leftovers for the week ahead to make quick taco salads, bowls, nachos, burritos, etc. Total winner.

For some reason we decided that tacos should be on Tuesday, but we do things differently around here. Truly any day is a good day for tacos, and when I say tacos, I mean anything involving some kind of tortilla product, some kind of main protein, and a bunch of crunchy things on the side.

I use the term tacos loosely because I prefer a kind of deconstructed taco: I pile meat and crunchy sides onto iceberg lettuce and go to town with chips, resulting in a chips & dip situation. Whatever you chose to call this, it’s guaranteed deliciousness.

Ground Beef Taco Meat
• 1 lb lean ground beef
• 1 medium onion, diced
• 3/4 cup tomato sauce
• 1-2 tsp taco seasoning
• 1-2 tsp worcestershire sauce

  1. Heat a large skillet over medium-high heat. Add the ground beef and let cook until almost fully cooked through and starting to grab color.

  2. Add diced onion and season well with salt. Continue to cook on medium-high until beef is browned and onions have softened.

  3. Add taco seasoning and let the spices bloom for about a minute.

  4. Add tomato and worcestershire sauces, and simmer for at least 10 minutes.

My favorite side to tacos is corn salsa. Which is saying a lot because I’m not the biggest fan of plain corn or corn on the cob. But you need something slightly sweet and definitely acidic here – corn is sweet and when tossed with spicy red onion and vinegar it becomes a crunchy bright addition perfect to go alongside your meat.

Corn Salsa
• 1/2 bag of frozen corn, thawed
• 1/4 medium red onion, finely chopped
• handful of chopped parsley
• 2-4 tbsp of distilled white vinegar, or lime juice
• Salt & pepper

  1. Add chopped red onion to a bowl and toss with salt, pepper, and acid of choice. Let sit for a bit to slightly pickle.

  2. Add corn and parsley; toss to combine. Serve alongside your main protein and other sides.
