Welcome back to Flavours of the World Cup, where I’m cooking my way through the tournament one game at a time ⚽️
Today’s fixture brings together two classics: Austria’s famous schnitzel and Argentina’s iconic chimichurri.
Chimichurri is one of Argentina’s most recognisable sauces. Fresh, herby and packed with garlic, it’s traditionally served with grilled meat and is a staple at Argentine asados. This is Chimichurri verde, but did you know there’s also Chimichurri rojo? (I did not)
For Austria, I took inspiration from Wiener Schnitzel, one of the country’s most famous dishes. Under Austrian law, a true Wiener Schnitzel must be made with veal - so my cauliflower version definitely bends the rules a little. If any Austrians are reading this, please tell me if I’m allowed to call this a Schnitzel!
The result was crispy cauliflower schnitzel topped with a vibrant chimichurri. Delish!
For the schnitzel:
1 large cauliflower
100g plain flour (approx)
100ml oat milk (approx)
100g panko breadcrumbs (approx)
Salt, pepper + sunflower oil (500ml) for frying
For the chimichurri:
Large bunch (approx 60g) fresh parsley
1 large garlic clove, minced
½ red chilli, finely chopped
1-2 tbsp red wine vinegar
6-8 tbsp extra virgin olive oil
Carefully slice the cauliflower into 1.5cm thick steaks.
Get your flour, breadcrumbs + milk into separate shallow bowls or trays. Season the flour + breadcrumbs well with salt + pepper. Coat each schnitzel in the flour, then plant milk and breadcrumbs. You want each well coated in breadcrumbs so it gets nice + golden.
To make the chimichurri, finely chop the parsley leaves, Add to a mixing bowl, then add the garlic, chilli, vinegar + gradually stream in the olive oil, whisking as you go. Season to taste with salt + pepper.
Warm your oil in a deep sided frying pan on medium-high. In batches, carefully place a few schnitzels in the oil, then fry for about 5 minutes until golden, crisp + cooked through. Place on kitchen towel to drain excess oil, season with salt + fry the remaining cauliflower.
To serve, get the schnitzels on a plate of platter. Drizzle with chimichurri, then serve with a salad if you like - enjoy!
