Tres leches cake is a classic Latin American dessert known for its soft sponge and signature three-milk soak. This cake and flavor combo was commissioned by my friend Avantika who LOVES tres leches, and the color pink.
My version brings a fresh spring twist with strawberries. The trick is in blending the fruit with the milk soak and whipped cream. By doing that, we are giving the cake a bright, fruity flavor that feels lighter and more seasonal.
If I have one takeaway from this recipe, it’s that strawberry whipped cream may be one of life’s greatest and simplest pleasures. It’s so easy to make, and has such bright strawberry flavor in the cream. Don’t even make the cake, just make the whipped cream.
If your strawberries are not very sweet, add an extra spoonful of sugar to the milk mixture to help enhance the strawberry flavor. Since strawberries can vary depending on the season, tasting the mixture before pouring it over the cake can help you adjust the sweetness.
The cake tastes even better the next day, once the sponge has had more time to soak up the strawberry milk mixture. So don’t worry if the cake seems too wet immediately after pouring over the milk mixture. The sponge will continue absorbing the liquid as it chills in the fridge.
