Many people seem strangely preoccupied these days with the intention of spending as little time in the kitchen as possible. I understand it, I do. A good thirty-minute — heck, sometimes even a fifteen-minute — supper (see here) is something I often rely on during a busy week. But there are moments, particularly where dessert is concerned, when speedy efficiency is entirely the wrong approach.
Spring, in my opinion, is the perfect season for pleasure baking. You can open the windows and bake without the stifling heat of August turning the process into a punishment, or the dead cold of February making you want to do nothing at all. In April, everything feels as though it’s loosening — the markets are the clearest sign of this: produce shifting week by week; rhubarb deepening in color; strawberries appearing - if a little tentatively - sweet and fragrant; and lemons — extra juicy.
My brown butter and lemon cupcakes are the perfect expression of this light, bright time of year. A cupcake is low-stakes in the best possible way — no towering layers to assemble, so no structural anxiety — and anyone lingering in the kitchen, particularly those under four feet tall, can be put to work on the decoration. Cupcakes also happen to be an excellent make-ahead dessert if you’re planning a barbecue — and if you are, I have a recipe coming this Sunday for a main course that is just the thing for the first proper grill of the year.
The elements - There are three elements here: sponge, buttercream, and curd — which together tip into full indulgence. But you can just as easily mix and match.
The flavor - Lemon and browned butter work because they balance each other so well. Lemon brings sharpness and clarity; browned butter brings depth — nutty, warm, lightly caramelized. One lifts, the other anchors.
On its own, lemon can feel a little one-note. Paired with browned butter, it becomes fuller, rounder, more satisfying. And the butter, in turn, never tips into heaviness — the citrus keeps everything in check.
Make it your own - Lemon goes with just about everything, so feel free to adapt. The first fragrant strawberries are a lovely pairing, so why not try perching them on each cupcake for a soft, seasonal finish. For a finishing touch, I used freeze dried raspberries that I ground into a powder and sprinkled over the top for a colorful fruity addition.
