As the weather continues to heat up, I love having some fun drinks up my sleeve to brighten the day. Obviously love a little tippled but a non alc at 3pm… wow it hits the spot. Cold teas aplenty in Tokyo (I love jasmine peach tea, ice cold bitter sencha in the heat and mugicha to help with any heat exhaustion) and I recently found myself loving cold hibiscus tea, lightly sweetened with agave. Mixing matcha straight in sounded a bit gross but a cute little cold foam felt super special mid week!
Make hibiscus tea (I just use the good and proper tea bags) and leave in the fridge to cool. Sweeten with a bit of agave and set aside.
To make the cold foam, mix matcha and double cream - you can add sweetener if you like.
Ideally, sift the matcha before whisking (I did not and paid the price when a lump of matcha made me gag on an otherwise very smooth and pleasant drink).
I use a mini milk frother for cold foams!
Pour the tea in a glass with ice and pour over the cold foam.
