I wasn’t expecting it.

I posted a reel of a ground chicken crust pizza, topped it with pepperoni, bacon, and yes — pineapple — and the internet had opinions. Lots of them. Most of them good. A few of them deeply personal (pineapple related lol).

But here’s the thing: people weren’t just commenting about the pineapple. They wanted the recipe. Over and over. “What’s in that crust?” “Is that actually chicken?”

So here we are.

This pizza has no flour, no cauliflower, no sad substitutes. The crust is made entirely from ground chicken, eggs, parmesan, and seasonings — and it bakes up golden, firm, and sturdy enough to actually pick up and eat like a real slice. High protein, gluten-free by nature, and genuinely delicious in a way that makes you forget it’s “healthy.”

As for the pineapple — I’m not arguing with you. I’m just saying that the sweetness against the salty bacon and savory pepperoni hits differently. It’s balanced. It’s intentional. It’s a private chef decision and I’m standing on it.

Make this on a weeknight. Make it for your kids. Make it for your skeptical friends and don’t tell them what the crust is made of until after they’ve had two slices.

Ground Chicken Crust Pizza Serves 2 | GF | High Protein

The Crust

  • 1 lb ground chicken

  • 2 eggs, lightly whisked

  • ½ cup parmesan cheese

  • 1 tsp granulated garlic

  • 1 tsp onion powder

  • 1 tsp Italian seasoning

  • ½ tsp salt

  • ½ tsp pepper

The Toppings

  • Pizza sauce

  • 1 cup shredded mozzarella

  • Toppings of your choice (My go-to: pepperoni, bacon, pineapple — trust the process)

Instructions

  1. Preheat oven to 400°F.

  2. In a bowl, combine ground chicken, eggs, parmesan, and all seasonings. Mix just until it comes together — don’t overwork it or the crust will toughen up.

  3. Line a rectangle baking sheet or round pie pan with parchment paper. Press the chicken mixture out as thin as possible without creating any holes.

  4. Bake at 400°F for 25 minutes, or until golden and firm to the touch.

  5. Remove from oven. Spread pizza sauce, add mozzarella, then pile on your toppings.

  6. Crank the oven to 450°F and bake another 10–15 minutes, until the cheese is melted and starting to brown at the edges.

  7. Let it cool a couple minutes, slice, and try not to eat the whole thing.
