For those of you who do not know, i was a line cook for 2 years during high school. Tonight, I subbed in, cooking pasta, vegetables and a variety of miscellaneous saute dishes. It is a good experience to periodically go back to remind yourself of what it is like. It is truly one of the most physically and mentally stressful jobs. It does not have to be, but errors in the system can quickly derail a service. People work harder than you for less money. it is a sad truth, but one that you need to be humble to. Be kind to food service workers. It is past midnight now, so i will be back to write more tomorrow. Even though this post is barely a paragraph, if i didn’t make it, i would risk losing the habit all together. Streaks are powerful motivators.
